I'm cooking this todayRecipe's preparation
1. Place the butterfly in the TM bowl.
2. Add the flours to the TM bowl, and top with the coconut milk, sweet potato, 1 of the eggs, vanilla powder and salt. Process for 15 seconds on speed 2. Scrape down the sides of the bowl.
3. Add the remaining egg, and process for 15 seconds on speed 2.
4. Heat a non-stick frying pan over medium heat, and melt a little coconut oil. Place spoonfuls of the batter into the pan, and carefully flip over once the edges start to set and bubbles appear on the surface.
Tip
This makes about 10 pikelets. The sweet potato adds a richness (and some sneaky nutrition!) to the pancakes.
I have served these with natural peanut butter, cinnamon cream cheese, and pecans toasted with a little rice malt syrup (fructose-free).
I keep batches of sweet potato puree (and also pumpkin puree) in the freezer - great for including in recipes like these, and as side dishes to main meals!

I’ve never heard of vanilla powder
nice, thanks for sharing. look forward to making these
Fantastic recipe and love that it's fructose free as I can give it to my baby as well as my 3-year-old. Both loved these! Next time I'll add a little cinnamon to the mixture. Thank you for sharing!
I made them and they were delicious. It would have nice to have the coconut milk and puree in grams...
I enjoyed these thanks. Used coconut cream as that's all i had and added some water to thin it out a bit. Will also add veges next time to make them savoury. Thnak you
That is fabulous! Your additions sound delicious - I will try those on my own kids too. Thanks for the feedback!
