- 45 grams sugar
- 60 grams Butter, chopped
- 40 grams plain flour
- 1 1/2 tablespoon golden syrup
- 1/2 teaspoon salt
- 250 grams Milk
- 40 grams brandy
- 60 grams cream

Place sugar in TM bowl and mill for 6 seconds on speed 9.
Add all other ingredients except brandy and cream. Cook for 5 minutes on 90 degrees on speed 4.
Cool slightly and add brandy and cream. Mix for 10 seconds on speed 4.
Enjoy on your Christmas pudding.

This is good, very easy to make, no eggs, don't overdue the golden syrup. I did add some port for depth, same amount as brandy. Yum!!
I have just made this sauce for our Christmas Pudding tonight and it is amazing. We had 10 adults for Christmas Dinner and it was rated very high by all. I will certainly be using this recipe again each year. I doubled the recipe and added about an extra 1.5 minutes to the cooking time. It is excellant! Thanks!!!!!
