  • 500 grams frozen raspberries
  • 500 grams Frozen Strawberries
  • 3 egg whites

Recipe's preparation

    Mill Sugar
  1. Mill sugar on Speed 9 for 30 sec.  Remove and set aside all but 60g of sugar.

  2. Mix Berries
  3. Add blueberries and chop 10 sec / speed 8

    Scrape down sides of bowl.

    Add egg white and mix 40 - 60 sec / speed 5 with aid of spatula.

    If desired, insert butterfly and mix 30 - 40 sec / speed 3.

  4. Next 2 Layers
  5. Place 60 g of sugar into the bowl.

    Add raspberries and chop 10 sec / speed 8

    Scrape down sides of bowl.

    Add egg white and mix 40 - 60 sec / speed 5 with aid of spatula.

    If desired, insert butterfly and mix 30 - 40 sec / speed 3.

    Pour raspberry mix into cake tin on top of blueberry layer and smooth over.

    Put into freezer.

    If desired, rinse mixing bowl.

     

    Place 40 g of sugar into the bowl.

    Add strawberries and chop 10 sec / speed 8

    Scrape down sides of bowl.

    Add egg white and mix 40 - 60 sec / speed 5 with aid of spatula.

    If desired, insert butterfly and mix 30 - 40 sec / speed 3.

    Pour strawberry mix on top of raspberry layer and smooth over.

    Cover with cling wrap and put into freezer.

  6. Serving
  7. Remove top cling wrap and turn over onto serving platter.  Remove cling wrap.

    Top with fresh strawberries, blueberries and raspberries then sprinkle with icing sugar.

Tip

Alternative to egg white is 50g cream or coconut cream for each layer.

My cake tin is 9 cm deep and has a diameter of 21 cm at the base and 23 cm at the top.  My spring-form pan is slightly too small but I have used it and just set aside small quantities of each layer to make it fit.

    Such a great idea!  Everyone was raving about this cake, and its super simple too.  I was using a spring-form pan, and as the authors tips suggested there was way too much mixture for this, so I ended up only having room for two layers, next time if I was using the same tin, Id probably reduce the berry mixture to 300g?  Anyway, loved it and will definatly be making again.  Thank you for sharing!
