- 50 g sugar raw, or natural alternative
- 450 g strawberries, sweet, in season
- 1 Egg white (optional)
- 650 g ice cubes
- 8 leaves mint leave, large leaves

Place sugar into mixing bowl and mill 10 sec/speed 9
Add strawberries, egg wite (if using), mint leaves and 350g of the ice and blend 20 sec/speed 10, gradually increasing speed from speed 1 to speed 10
Add remaining ice and blend for a further
50 seconds (or to suit your own consistency) using the spatula to assit.
Serve or put into ice block moulds for the kids!
*** This is quite a wet mix as we did it for iceblock moulds for the children. Adjust ice quantity as required.
Tip
Add more ice to serve straight away!

A hit with the kids I did omit the mint though. So easy and makes a heap!
For more traditional sorbet texture and more strawberry flavour (original recipe was too icy for me) I froze one punnet of the strawberries and reduced the ice to just 300g. I mixed the ice in to the two seperate batches as above (150 g, then 150g). I also added only 4 leaves of fresh mint.
