Ingredients

Base

  • 150 grams Butter
  • 300 grams plain sweet biscuits, I used Spekulatius Spiced Cookies for a Christmassy Spiced Flavour
  • 50 grams Shredded coconut

Filling

  • 1 can Nestle top'n'fill caramel
  • 100 grams Caramel Sweets, - I used Curly Wurley, fudge or fantales would be good
  • 100 grams chocolate, - I used plain dark, but any hard flavoured chocolate would work
  • 500 grams cream cheese

Recipe's preparation

    Base
  1. Weigh butter into Thermomix bowl.  Melt for 1 minute 30 seconds on speed 4.

    Remove lid and using a paper towel clean the underside of the lid and use this to grease your springform tin, then line with the baking paper. 

    Weigh biscuits into Thermomix bowl breaking in half as you go.  Process for 4 seconds speed 8.

    Remove lid and scrape down sides.  Weigh coconut into bowl.  Process for 2 seconds speed 8.

    Tip crumbs into prepared pan and pack firmly.  Take a little extra time here to get the base and sides nice and thin and even.  Use a glass to get a good corner and gently press down the top all the way around so its an even height – needs to be about 3cm high.

    Put base into fridge to firm up while you prepare the filling.  There is no need to wash the Thermomix bowl.

  3. Place caramel sweets & chocolate into Thermomix bowl and chop for 3 seconds on speed 8.  Check for any large lumps and blitz on turbo once or twice if necessary.

    Weigh in 500 grams of cream cheese and empty in the can of Top’n’Fill.  Replace lid.

    Beat mixture for 1 minute on reverse speed 3.

    Pour into prepared base and gently spread top so its even.  Don’t fill over the top of the biscuit base.  Chill in refrigerator for 3 hours (or overnight) until set.

  4. Once set gently unclip the springform pan & slide cheesecake onto serving plate - removing the baking paper.  Cut & serve.

Tip

Don't skip the baking paper step as its nearly impossible to get the cheesecake off the base in one step without it.  I didn't line my sides but I wish I had as I broke one side a little.  This cheesecake has chunks of caramel and chocolate through it - if you like your chunks bigger reduce the chopping time.

No Bake Choc-Caramel Cheesecake

    I found this recipe to be too sweet and too heavy for my tastebuds. Even my sweet tooth husband said it was too much. If I make it again I would reduce the chocolate and caramel and maybe add some cream to lighten the density.

    Probably not a good beginner recipe but still easy to do. Although a heat setting in the recipe would be good for the melting butter. Can't wait to try it.
