Ingredients

Marshmallow

  • 130 g hot water
  • 100 g Coconut Syrup
  • 2 tsp gelatine
  • 1 vanilla bean pod, seeds

Chocolate

  • 200 g cacao butter
  • 100 g Coconut Syrup
  • 60 g cacao powder
  • 1 vanilla bean pod, seeds
  • pinch Himalayan salt

Assembly

  • 70 g pistachio nuts
  • 70 g dried cranberries

Recipe's preparation

    Marshmallow
  1. 1. Place water, coconut syrup and gelatin in Thermomix bowl and cook for 5 minutes / 100C / speed 2

    2. Allow to cool to room temperature

    3. Insert Butterfly - place basket on lid and whisk for 3 minutes / speed 4

    4. Remove basket and whisk for a further 3 minutes / speed 4

    4. Add vanilla seeds and beat for 15 seconds / speed 4

    5. Pour into lined baking dish or slice tray. Allow to cool for 15 - 25 minutes in fridge. Cut into small squares

     

  2. Chocolate
  3. 1. Chop cacao butter into chunks and place in Thermomix bowl. Mill for 10 - 20 seconds / speed 8

    2. Cook for 10 minutes / 37C / speed 2. Scrape down sides towards end of cooking time to ensure all is melted

    3. Add coconut syrup, cacao powder, vanilla seeds and salt and cook for another 10 minutes / 37C / speed 2

    4. Mix for 10 seconds / speed 5 to ensure coconut syrup is evenly distributed

     

     

  4. Assembly
  5. 1. Line a baking dish with baking paper

    2. Pour a small amount of the chocolate on the baking paper. Move the dish around so that the chocolate covers the bottom of the dish

    3. Roughly make a layer of marshmallows, leaving small gaps in between.

    4. Sprinkle half of the pistachios and cranberries over the marshmallow.

    5. Pour approximately 1/4 of the chocolate over the top over the marshmallows.

    6. Place the remaining marshmallows into the gaps. 

    7. Sprinkle the remaining cranberries and pistachios.

    8. Pour the remaining chocolate over the top, ensuring that everything is evenly covered

    9. Refrigerate for 30 minutes or until chocolate has set. Cut into pieces and enjoy!
