- 75 grams Dedicated coconut
- 70 grams frozen raspberries
- 2 tablespoons Maple syrup
- 1 teaspoon lemon zest
Extra coconut for rolling

Soak cashews in water for 4 hrs
Drain cashews
Add all ingredients to bowl
Mix 5sec/speed 7 MC on
Scrape down sides of bowl
Mix 5 sec/speed 7 MC on
Roll mixture into small bite sized balls
Roll in extra coconut
Store in fridge for up to 2 weeks

Thanks for the great recipe - they are so quick and easy to whip up for a lovely looking take a plate, or quick snack! The colour is amazing.
Mine were slightly too wet, I think I had a fair bit of ice with the frozen raspberries, so might do a quick rinse of them next time. They are not as firm as I would like as a result, even though I added a little almond meal to compensate.
I also wondered about adding some freeze dried raspberries for some added raspberry flavour next time. Loved the lemon zest, and they make a nice change from the lemon bliss balls.
