Ingredients
For the base
- 230 g raw cashews
- 50 g dessicated coconut
- 10 medjool dates, de-seeded
- 60 g Rice malt syrup
For the peanut butter caramel
- 10 medjool dates, de-seeded
- 125 g crunchy peanut butter
- 30 g Almond milk
- 35 g Rice malt syrup
for assembly
- 60 g peanuts, crushed
- 50 g chocolate chips, raw

- Line 20cm x 20cm square tin with baking paper and put aside
Place cashews into bowl and mix for 3 seconds, speed 6 MC on
Add in coconut, dates and rice malt into bowl and mix for 10 seconds, speed 6 MC on
Press mixture into prepared tin until flat and even and place in the freezer. - Without washing the bowl place all the ingredients into mixing bowl and mix for 10 seconds, speed 7 MC on
Scrape down the sides of the bowl and mix again 20 seconds, speed 7 MC on
Spread the caramel over the base, sprinkle crushed peanuts on the top and gently press into caramel
Place into freezer until hardended - Once hard carefully remove from tray (I run a warm knife around the outside to seperate from sides of tin, turn upsaide down and then gently wriggle out form tray)
Cut into pieces (I cut mine into 16 pieces and froze half because I'm a pig and have no self control 😂)
If you'd like to add chocolate drizzle on top, melt your chocolate in the microwave, stirring every 15 seconds until completely melted.
Drizzle chocolate over the bars
Place back in freezer until chocolate is completely set.

Tip
Almond milk can be substituted with coconut milk or plain full cream milk
These are great with or without the chocolate drizzle.

I'm not sure I haven't tried maple syrup 🤔 I'd say honey would work though because its a similar consistency

Do you think Maple Syrup would work in place of rice malt syrup?
Made these last night. So delicious and easy. I mixed my caramel one extra time which helped I think. I didn't have peanuts to add on top but the flavour was so yum I thought if I added banana in between the layers it'd taste like I was eating banoffee pie!
