Ingredients

Dry Ingredients

  • 4 heaped tablespoons pumpkin seeds
  • 4 heaped tablespoon Shredded Coconut (or dessic)
  • 4 tablespoon raw cacao nibs
  • 4 tablespoon chia seeds
  • 2 heaped tablespoon sunflower seeds
  • 2 heaped tablespoon sesame seeds
  • 2 tablespoon Bee pollen, optional

Wet Ingredients

  • 20 fresh medjool dates, pitted
  • 6 tablespoon coconut oil, room temperature
  • 1 whole vanilla bean, cut into pieces

Add after blending

  • 6 tablespoon rolled oats
  • 2 tablespoon poppy seeds

Recipe's preparation

  1. Place dry ingredients into TM bowl Speed 5 for 5-6 seconds.  Empty into another bowl.


    Place wet ingredients into TM bowl Speed 5 for 5-6 seconds. 


    With MC off and running blades Speed 5 tip dry ingredients into TM bowl.  Allow to mix for a few seconds. 


    Add rolled oats and poppy seeds Reverse Blade Speed 1 for a few seconds to mix in. 


    On a paper-lined baking tray, empty mix and press into a flat shape about ½ inch thick.  Place in refrigerator to harden.  Cut into desired squares.


     


    Note:  The speeds and timings can be adjusted to achieve your desired textures.

    Mighty fine - had to soak dates overnight and replaced vanilla bean with paste, plus added 2 tablespoons of linseed. Amazeballs tmrc_emoticons.-)

    Pretty good. They crumbled a bit when cutting and the coconut oil flavor is fairly strong, you have to like it. tmrc_emoticons.-)

    These are fantastic!  I do quite a lot of riding and these have been a great energy provider for the long rides.  They even hold their shape after being in my jersey pocket for several hours.  They're delish.  I also send small ones with my son to school, keeps his energy levels up and he doesn't know they're so good for him tmrc_emoticons.)

    The one change I made was to use 40 gms of dark chocolate (85%) instead of the cacao, I also omitted the honey.
