Recipe's preparation

  1. Step 1 - Place 1 Egg white in thermo bowl set 2 sec - speed 2. Then add 400 grams of Honey good quailty.

    Step 2 - Put butterfly in & set timer for 60 mins at 100 degrees & set Speed 2, leave measuring cup off!

    Step 3 -Take butterfly out & add in 180 grams of slighty roasted Almonds*, stir in with spatula.

    Step 4 - On a baking tray 20cm X 20cm, place a sheet of baking paper down first, then a sheet of rice paper*. Spoon mixture liberally over the rice paper but be careful not to tear the rice paper*, you need to move quick with this step.

    Step 5 - Place another sheet of rice paper* on top then followed by a sheet of baking paper and roll out to the desired thickness.

    Step 6 - Let it set in fridge for approximately 30 mins, then slice up into your desired thickness strip with a hot knife, trimming all edges first.

    *Almonds – Make sure you slightly roast almonds before adding to the mixture. About 180dg for about 5 mins. Other nuts can be used in this receipe like Hazelnuts or pistachios.

    *Rice paper, most good italian delicatessens have sweet rice paper & also some fruit markets.



    Note - this is a soft torrone, so it must be kept in the fridge as it will flatten in room temperature. The torrone will get a little hard in the fridge over time but still easy to chew.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This was a big hit! Although I didn't use the rice paper. Just lined a tray with baking paper and spread it out. Once I cut it all up I also drizzled some melted dark choc over the top. Will def be making this again!

    Really delicious flavor but hard to cut so kept it in the freezer and snapped pieces off
