  • 700 grams cream
  • 8 egg yolks
  • 75 grams sugar

Recipe's preparation

  1. Mix egg yolks and sugar sp 5 20 secs. Put into seperate bowl and clean and dry TM bowl thoroughly. 

  2. Grate chocolate sp 10 10 secs

  3. Add cream and heat sp 4 2 mins 80 deg or until chocolate has melted

  4. Whilst machine is running sp 4, (turn off heat) add egg and sugar mix through MC hole. 

  5. Place couple of raspberries into each small ramekin bowl. Top up with mixture. 

  6. Clean TM bowl. Add 1L water. Add varoma with ramekins inside and varoma lid on top (if ramekins don't fit with varoma lid on top, enclose in aluminium foil tightly so steam doesn't escape). Depending on size of ramekins sp 2 varoma 40-60 mins

  7. Chill in fridge for 2 hours. OR serve hot

  8. Sprinkle tops of custard with brown sugar. Blow torch sugar crispy or place under grill on highest setting. 

Tip

You will need ramekins that will fit inside the varoma for this dish. If they do not fit, enclose varoma with aluminium foil as a lid.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
