Recipe's preparation

  1. Place chocolate and 230 g cream into mixing bowl and heat on 6 min/50C/speed 2.  Once melted, transfer to a large bowl and set aside. Clean and dry mixing bowl.

  2. Insert butterfly whisk. Add the remaining 220 g cream into mixing bowl, whip 20-30 sec/speed 4 or until soft peaks form. Set aside in a separate large bowl. Clean and dry bowl.

  3. Insert butterfly whisk. Place egg yolks and 40 g of the sugar into mixing bowl to make a sabayon. Cook on 5 min/60C/speed 3, with measuring cup removed.

  4. Add 50 g whipped cream to chocolate mixture and fold through. Then fold sabayon through chocolate mixture. Set aside. Clean and dry mixing bowl thoroughly in lukewarm water. Mixing bowl should be at room temperature.

  5. Insert butterfly whisk. Add egg whites and whip 2 min/speed 4, slowly adding remaining 30 g sugar, until soft peaks form. Gently fold egg whites into remaining whipped cream, then fold whipped cream mixture thoroughly into chocolate mixture.  Cover with plastic wrap and place into refrigerator to set until firm (approx. 3-4 hours).

Tip

This recipe was created by Zokoko's chef Matt Walton for our Group Leader Incentive Trip. 

 

We suggest creating tart shells using the Almond pastry recipe on pg 130 of Everday Cookbook and placing raspberry jelly on the base of the tart.  Once Chocolate mousse is set pipe into tarts for a delicious dessert.

    This is a great recipe! Thank you! Not too sweet either.
    The only thing is that it does not justify a Thermomix.
    I used my beloved Thermomix for the sabayon, I used a hand held mixer for the egg whites and for whipping the cream. I used my stove top to melt the chocolate. Multitasking this way, took me only 7 min to prepare this decadent mousse

    Chocolate mousse is so hit and miss with me.  So I gave this one a go and it works and it's delish !.

    The only annoying thing is washing the bowl 4 times !. But worth it.  Thank you !

    Both my two boys like it as well so it's not too rich.
