Lemon Meringue Pie cocktail
- 250 g Lemon curd
- 120 g Limoncello
- 60 g fresh lemon juice
- 180 g vodka
- 50 g egg whites
- 1/4 tsp salt
- 140 g castor sugar

- Lemon curd - can use store bought or made in the Thermomix.
Meringue - preheat oven to 135c.
Place sugar in mixing bowl and grind 20 sec / speed 7
Insert butterfly whisk. Add egg whites and salt then, without measuring cup, whisk 10 min / 37c / speed 2 until thick and glossy.
Using piping bag, pipe swirls onto baking paper.
Lightly caramelise with a blow torch.
Bake in oven 5 minutes. Meringue should feel spongy not crunchy.
Cocktail mix - add to jug lemon curd, vodka, limoncello and lemon juice.
Blend 1 minutes / speed 5
Taste and add sugar syrup or lemon juice if required. Chill until ready to serve.
Rim glasses with yellow crystals.
Add cocktail mix to glass.
Add meringue floater, and straw.

Tip
The Cookidoo lemon curd recipe is what I use and can be made days before and stored in fridge.
if you don't have a blow torch then can leave that step out and just have meringues not toasted.
Cocktail mix can be made up to 4 days prior.
