Recipe's preparation

  1. Add water to TM Bowl and Bring to boil.  10 min / Varoma / Reverse / Speed 2.  Once Water is boiling you can stop this process and reset your timer (push the plus + minus buttons together resets your timer).  Or alternatively you can add 500ml of boiling water to the bowl.

    Peel the limes.  Just the green skin. Try to get as little of the white pith as possible, set peelings aside.

    Cut the limes in half.  Place TM Lid on with MC in place.  Zero off your scales. Squeeze the limes directly onto the TM Lid. The juice will fall through into the bowl and any pulp and pips will be caught on the lid.

    You should have appoximately 45-60g of juice.  You may need to add more limes or less depending on the size of your limes.

    Remove Lid and wash off / discard pulp from the top.  

    Place the lime peelings into the TM Bowl.

    Zero your scales - add sugar to bowl.

    Zero scales again and add Tartaric Acid to Bowl

    Cook 10 minutes / 90 degrees / Reverse / Speed 2.

    You can allow to cool in TM Jug or pour off into another jug to cool before bottling.  

    Place Basket into TM Jug (be careful the mixture mat be hot).  With Basket in Place (to strain off lime peel) pour mixture into another jug to cool before bottling.  You may need to hold the edge of the basket at the point just above the handle of your TM Jug, to stop it from falling out when you pour the cordial out.

    Mix cooled cordial with water to taste and ENJOY!

     

Tip

Limes can be mixed with Lemons to create a Lemon/Lime Cordial, or completely swapped out with Lemons to create a Lemon Cordial.

    I have I have been making lime cordial for about 10 years and this is the best one I have made. It is not too sweet and allows the lime flavour to really grasp you. I did adjust the recipe a little by using more lime juice and only 325g sugar.

    All rave reviews from those I have shared it with. Well done

    My family have enjoyed drinking this with icy cold water or soda water. So easy to make & no additives. Will explore other flavours now after this recipe success tmrc_emoticons.) Thanks for sharing tmrc_emoticons.) I used 120g of lime juice (to make it more limey) & raw sugar & think it became more brown compared to the colour in the pic.
