- 3 egg whites
- 20 g sweetener
- 120 g gin
- 30 g lime juice
- 100 g soda water
- 200 g ice cubes
- 30 g rhubarb cordial

- Insert butterfly whisk. Place egg whites in mixing bowl add 20g of sweetener and whisk 4 mins/37°C/speed 4. Remove butterfly whisk.
- Add gin, lime juice, soda water, ice cubes and 30g of rhubarb cordial. Blend 20 sec/speed 5. Divide between cocktail glasses.
