Ingredients

Sugarfree Afghan Biscuit

  • 200 g Butter
  • 100 g Monkfruit sweetener
  • 120 g almond meal
  • 40 g tapioca flour
  • 30 g cocoa powder
  • 1 tsp vanilla extract
  • 60 g Chopped walnuts
  • 2 tsp chia seeds

Chocolate Icing

  • 20 g Butter
  • 200 g icing sweetener
  • 20 g cocoa powder
  • 2 tbsp water
  • 12 piece walnut, halved

Recipe's preparation

    for the biscuit
  1. preheat oven to 180°C. Line a baking tray with baking paper and set aside.
  2. place butter and sweetener into mixing bowl and mix 20 sec/speed 4
  3. scape down sides of mixing bowl with spatula and mix a further
    20 sec/speed 4 scrape down sides of mixing bowl with spatula
  4. add almond meal cocoa powder, tapioca flour, chia seeds and vanilla mix 10 secs/speed 4 scape down sides of mixing bowl with spatula
  5. add chopped walnuts and combine 10 secCounter-clockwise operation"Counter-clockwise operation" speed 2

    until combined
  6. place tablespoons of mixture onto baking trays and press down lightly. bake for 15 mins. set aside and cool completely
  7. chocolate icing
  8. place butter in mixing bowl and melt 2 mins/50°C/speed 2
  9. add sweetener, cocoa powder and water mix 10 secs/speed 4

    spoon over cooled biscuits and decorate with a walnut half
