Ingredients

Salad

  • 300 g raw peeled prawns
  • 300 g Rice Vermicelli
  • 1 Lebanese cucumber, sliced thick matchsticks
  • 1 purple carrot, matchsticks
  • 7 grape tomatoes halved
  • 1/2 cup thai basil
  • 1/2 cup corriander leaves chopped
  • 3 heaped tablespoon roasted peanuts, chopped
  • 3 heaped tablespoons roasted dried shallots
  • 2 heaped tablespoons chopped red and green chilli
  • 2 cups bean shoots
  • 1/2 cup Mint Leaves

Dressing

  • 2 tablespoons fish sauce
  • 6 tablespoon lime juice
  • 1 tablespoons palm sugar
  • 2 red chillis, dried
  • 1 clove garlic

Recipe's preparation

    Dressing
  1. Place chilli and garlic in TM and grind for 7 sec speed 5. Add all other ingredients and blend speed 5 for 5 secs. Romve to a bowl or jar for sugar to disolve.

  2. Salad
  3. Add 1500 g water to TM bowl. Add prawn flesh to varoma basket. Steam on varoma temp for 15 min or until prawns are just pink. Remove and put into fridger to cool. Meanwhile, break noodles in half for easy fit and place in TM with the hot water. Cook on reverse 1 temp 100 degrees for 3 minutes.

    When done, drain and rince in cold water. Place in fridge.Then eiter dry TM bowl or use frypan. Toast peanuts and dried shallots until golden and fragrant. Set aside. Mix togerther all other salad ing.

    Mix in dressing as quantity required.

    Serve with chopped chillies and peanuts and shollots.

    Lovely salad. Made it to take to a concert to eat beforehand. Next time I will cut up the carrots and cucumber in the Thermomix to save time.

    Love this salad! Have made it twice this week, I did double the salad dressing and added 1/2 a lettuce to feed six of us. Very refreshing thank you

    Dried Shallots are avail from asian shops. I used small birdseay red chillies seeds in for extra xxx kick and also more lime juice.
