Ingredients
- 1 brown onion, cut into slices
- 500 grams chicken thighs, cut into cubes
- 2 teaspoons Keens Curry Powder
- 400 grams Vegetables, such as pumpkin and zucchini, cut into cubes
- 1 can (425g) mangos
- 1/2 can coconut cream
- dash olive oil

All steps done at varoma temp, reverse "Counter-clockwise operation" speed 1.
Put brown onion cut into slices plus a dash of olive oil into Thermo, cook for 3 mins.
Add 500g chicken thighs cut into cubes, cook for 5 mins.
Add 2 teaspoons of Keens curry powder, cook for another 5 mins.
Add 500g of vegetables*, cut into cubes, 425g can mangos* and half a can of coconut cream, cook for a final 10 mins.
*Softer vegetables like zuchini or peas can be add in 5 mins before the end if you dont want them too soft.
*I added half of the liquid, but depends on how thick you want the curry.
Serve with rice or mashed potato cooked using the TM cookbook "Everyday cooking for everyday families".
Tip
Lazy version:
1) Chop onion in Thermo, add olive oil, cook for 3 mins.
2) Add all other ingredients roughly chopped, chop in Thermo to your liking, cook for 20 mins.

Great recipe, it's pretty much identical to one on the side of the Keen's curry powder tin that my Nan used to make, but with vegies added.
I drain all the mango juice off, and add a little extra coconut cream instead.
