Ingredients

Stuffing

  • 1/2 piece brown onion
  • 300 grams Lean mince beef
  • pinch chilli powder
  • 1 piece Medium tomato
  • 1/3 parsley, 1/3 cup
  • pinch ground cumin
  • pinch black pepper ground
  • pinch salt
  • 20 gram soft butter
  • 250 grams white long grain rice, Washed

Zucchini and sauce

  • 10-15 pieces Lebanese zucchini, Also known as white zucchini. Best size would be about 10cm and 'fat'
  • 140 gram tomato paste

Recipe's preparation

    Hollow zucchini
  1. Chop the top off of each zucchini 

  2. using a long corner which can be bought from most Arab grocers, core each zuchinni (you may keep the left overs for omelette) being careful to not pierce the skin.

  3. Once done fill bowl with Luke warm water and salt. Place the zucchini in there to sit.

  4. stuffing
  5. place onion, tomato (chopped in 4), parsley into bowl and chop on 5sec/7 speed /mc on

  6. add remaining stuffing ingredients into bowl. Using the Dough mode"Dough mode" function knead for 1.5 minutes

    Empty into bowl.

  7. drain the zucchini from bowl and stuff with stuffing leaving 1cm at the top for expansion.

  8. with any remaining stuffing make into meat balls

  9. place zucchini and meat balls into varoma use both levels if needed.

  10. sauce
  11. place 140g of tomato paste and 700ml of water into bowl. You do not need to clean bowl for this step.

  12. add the varoma on top and cook on 60min/varoma/speed 3

  13. once complete (be warned the meat balls look very weird because of the rice) serve warm with a bit of sauce over the top. If you have meat balls break them up in the sauce.

    can be served with yogurt

    cant believe this has been on here for this long and there is no ratings or comments.... I was surprised when i saw it and then worried becuase i have never done this recipe in the thermomix and wasnt confident it would replicate the traditional kousa that i know.
    Can i say that it was amazing!
    i have to be honest that i didnt follow the recipe exactly, i am used to having the mince cooked prior to stuffing. I fried the mince with the onion on a pan in butter and then took it off the stove to added the rice, chopped parsley and tomatoe through it. Let it cool before filling the zucchinis and continue as per recipe.
    Oh and i added salt and pepper to the suffing and the sauce as well as left out the chillie and cumin. BEST EVER and so much more convient with the thermomix. Thanks for the recipe!
