Ingredients

Lamb Kofta

  • 2 cloves garlic, peeled
  • 1/2 onion, peeled, cut in half
  • 3 sprigs fresh coriander
  • 500 grams lamb mince
  • panko breadcrumbs, 1/4 cup
  • 2 teaspoons ground cumin
  • 2 teaspoons Ground Coriander
  • 2 teaspoons paprika
  • 11/2 teaspoons ground cinnamon
  • 1 pinch cayenne pepper
  • 11/2 teaspoons salt
  • 1/2 teaspoon pepper, ground

Yohurt Sauce

  • Greek yoghurt, 1 cup
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon cumin seed, ground
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, ground

To Serve

  • 8 skewers
  • 8 flatbreads
  • lettuce, tomato and onion slices

Recipe's preparation

  1. Combine the yoghurt sauce ingredients and leave in the fridge for at least 20 mins for the flavours to develop (overnight is even better).

    Place garlic, onion and coriander into TM bowl & chop 3 sec speed 5. Scrape down sides of bowl with spatula. Repeat until finely chopped.

    Add remaining ingredients & combine 10 sec sp 4 Counter-clockwise operation"Counter-clockwise operation" . Scrape sides with spatula & repeat until well combined.

    With damp hands, divide the meat into 8 equal portions and shape the meat onto 8 skewers in a sauage shape.

    Cooking methods
    1: Stove: Preheat 1/2 tbsp oil in a large frying pan over medium high heat. Cook in batches for 5 mins in total, turning to brown evenly all over.
    2: BBQ: BBQ on medium high for about 6 mins, rotating to brown all over.
    3: Broiler/Oven Grill: Preheat and cook koftas 30cm from heat source for 12 mins, rotating as needed until lightly browned (you won't get as good a browning as stove/BBQ).

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
