Ingredients

Leftover Chicken Burgers - using cooked roasted chicken

  • 60 grams bread, stale, Approx 2 slices
  • 200 grams roasted chicken, White meat, no skin
  • 1 --- small onion, Quartered
  • 2 tbsp olive oil, or butter
  • 1 tsp mustard
  • 1 --- egg or egg white, Beaten
  • 1/2 tsp sea salt
  • 2 tbsp coconut oil, Or schmaltz for frying

Recipe's preparation

    Chicken Burgers
  1. 1. Place bread into dry mixing bowl with measuring cup speed 6/5 sec, repeat if needed and set aside.
    2. Without cleaning, add chicken to mixing bowl with measuring cup speed 5/6 sec, set aside.
    3. Without cleaning, add onion to mixing bowl with mixing cup speed 5/4 sec. Add olive oil and cook without measuring cup speed 1/4 minutes/heat 120.
    4. Return chopped chicken, and bread crumbs, add mustard, egg and salt. Mix with measuring cup speed 4/2 seconds.
    5. Scoop out into a bowl, and form into 4 large patty. Cook 4 minutes per side in a hot pan with remaining oil until brown and slightly crispy.

Tip

Use up leftover cooked chicken in these burgers to make it seem like less of a leftover.

Make the mix ahead and refrigerate until ready to cook.
