Ingredients

Chicken Hash Browns

  • 400 grams potatoes, 3-4cm cubes
  • 400 grams Vegetables of choice, 3-4cm cubes
  • 500 grams chicken breast, 3-4cm cubes
  • 1 tablespoon vegetable stock
  • 3 tablespoon plain flour
  • 2 eggs
  • Salt & Pepper, to taste
  • Olive oil, to cook

Recipe's preparation

    Preparation
  1. 1. Put in potatoes and other vegetables (carrots, celery, cauliflour, broccoli, zucchini all work well) and put in bowl for 6-8 seconds, speed 6.

    2. Squeeze excess liquid out using the simmering basket and empty contents into new bowl.

    3. Put chicken in bowl, mix 6 seconds, speed 8

    4. Put vegetables back into bowl with chicken, add all other ingredients apart from oil and mix on reverse until well combined, approx 10 seconds, speed 5.

    5. Scrape down sides of bowl and continue mixing in 5 second bursts if not combined enough.

  3. 1. Preheat fry pan, pour in small amount of oil.

    2. Using two dessert spoons, spoon large spoonfuls of mixture into frypan and slightly flatten.

    3. Turn over when golden brown.

    4. Remove from heat when both sides golden brown.

    5. Place cooked hash browns in thermoserver (or tray in warm oven if no thermoserver) and serve with mayonnaise, mustard sauce or other condiment as desired.

     

    CAUTION - If you're using chicken or pork ensure that the protein is cooked properly. It may need some extra cooking time in the varoma or oven if undercooked.   I put my patties in the thermoserver and it may have helped finish the cooking process.

     

     

  4. Tips (wouldn't let me type under 'tips' section below)
  5. Protein - Can omit meat altogether or replace with equal quantity fish, pork, turkey or other protein.

     

    Gluten free - Could swap plain flour for gluten free flour.

     

    Flavours - Feel free to play with flavours! Add fresh herbs (parsley, coriander, basil, chilli...) or seasoning (Morroccan, Italian...) to spice up your meal.

     

    Cooking method - Instead of frying you could cook them on a grill, bake in the oven or even try steaming in the varoma basket.

     

    Accompanying sauce - Place 1 tablespoon flour, 50g water, 75g cream (lactose free if lactose intolerant) and 1 tablespoon seasoning (mustard, cheese -or both!- or other) in the bowl and mix for 6 minutes, 90 degrees, speed 1 while cooking the patties to have a complete meal ready within 20 minutes. (If cooking in the varoma start the sauce when 6 minutes remaining.)

    Hi, we really enjoyed this recipe - easy to make, great finger food for the kids & uses up end of the week veggies! 

    i got 24 this size & popped them in the oven in between batches. Will be awesome for lunch boxes! 

    I substituted tapioca flour instead of plain flour & tonight used capsicum, carrot, mushroom & kale. I usually use chicken thigh

    Hi Jenayre,

    As the original recipe stands it is not vegetarian but if you read the 'Tips-Protein ' section you'll find I typed something along the lines of 'Can omit meat entirely' which would make the dish vegetarian.

    Life's too short to hold a grudge, eat bad food or drink bad wine...
