Ingredients
- 100 g brown onion, cut in quarters
- 3 cm Cube fresh ginger
- 80 g ghee or olive oil
- 1/4 tsp chilli powder
- 3 fresh curry leaves, chopped
- 1 1/2 tsp Mustard seeds
- 1 tsp ground turmeric
- 250 g frozen vegetables (peas, corn, carrot)
- 2 tsp sea salt
- 200 g coarse semolina
- 600 g Boiling water
- 15-20 roasted cashews or flaked almonds

Place onion and ginger into mixing bowl and chop 5 sec/speed 5. Scrape sides of bowl with spatula.
Add ghee, chilli powder, curry leaves, mustard seeds and turmeric and cook 3 min/100C/speed 1.
Add vegetables and salt and cook 3 min/100C/"Counter-clockwise operation" /speed 1.
Add semolina and boiling water and cook for a further 2 min/100C/"Counter-clockwise operation" /speed 2.
Serve garnished with nuts.
Tip
Upma is a common South Indian and Sri Lankan Tamilk breakfast dish, cooked as a thick porridge from dry roasted semolina.
If you wish to use raw vegetables in this dish, cook for an extra 3-4 min. Boiling water is used to reduce the cooking time when you are in a hurry, otherwise add 4-5 min. Ghee is preferred in this dish as it has more flavour and adds to the colour. Use more chilli if you prefer the taste to be hotter.

Do we sort of roast the semolina 1st lightly?
think l will try this one it looks and sounds yummy.
I made this recipe with only a teaspoon of oil and everything else the same, it worked just fine. So if you are watching the fat in your diet don't add all that oil. Otherwise this is a tasty combo..yum!
