Ingredients
Black Bean Paste (sauce)
- 20 g garlic cloves, cut into 2 pieces if large
- 20 g ginger, cut into slices
- 5 piece Small hot chilli, deseeded if preferred, 3-4 cm long x 0.5 cm wide
- 40 g vegetable oil
- 40 g Chinese rice wine or dry sherry
- 80 g soy sauce or tamari
- 5 g rice vinegar
- 5 g sugar
- 5 g sesame oil
- 25 g water
- 375 g Chinese salted black beans, 1 packet of the vacuum packed type

- Place chilli (optional), garlic and ginger into mixing bowl and chop 5 sec/speed 7
Scrape down sides of mixing bowl with spatula
If needed, chop again 3 sec/speed 7 so all pieces are chopped evenly
Place black beans into simmering basket (or into a bowl) rinse well with cold water and drain lightly
Add the drained black beans and all remaining sauce ingredients and mix 10sec/speed 5
If mixture is too thick and dry in appearance, add a small amount of water (25 gm) and mix reverse/15 sec/speed 2. Repeat as required to make a moist paste (not a wet sauce)

Tip
Black bean paste is made using fermented black soya beans (Glycine max) and are commonly called Chinese black beans, salted black beans or douchi. Recipes requiring black bean sauce often use a ready-made bottled sauce but making your own is easy and once it's made you store it in the fridge until needed. You get a much stronger and vibrant flavour in your meal by making your own.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
