Recipe's preparation

This is a great accompaniment to fish, or can be used as a salad dressing. If you use as a salad dressing, add a little more oil at the end.
  1. Wash coriander and remove roots.

    Peel garlic.

    Peel lime.

  2. Add lime, coriander, garlic, olive oil, salt and pepper to Thermomix bowl, MC on and process sp 8 20 secs.

  3. Add cashews and process turbo 3 sec approx 6 times until your desired consistency is reached (I scrape down sides each time)

Tip

Additional cashews can be added for a chunker texture, add extra oil to loosen texture for a salad dressing. This is especially nice with steamed salmon.

I also love this as a dip.

Brilliant fresh and tasty! I substituted macadamias for cashews and added a small red chilli.

Hi Tracey, sorry you didn't like it, I have changed the title to pesto, as it may not be everyones cup of tea as a dip, but we really like it. Thanks for your feedback.  tmrc_emoticons.)
