Ingredients
Love Ley Choko Pickles
- 1100 g choko, peeled, cored and diced
- 170 g onion, brown or white
- 15 g fresh ginger, peeled
- 150 g green apple, peeled, cored and diced
- 370 g sugar, white or raw is fine
- 370 g vinegar
- 1 tbsp tumeric powder, powdered
- 1 tbsp mustard powder
- 1 tbsp curry powder
- 1 tbsp Mustard seeds, white or yellow
- 1/4 tsp ground cloves
Thickening paste
- 80 g plain flour, 1/3 cup
- 60 g vinegar
- 30 g water

- Place large container onto lid and weigh in the Choko (a
Peel and dice the Choko. Place them in a large plastic container and then sprinkle with 1/2 cup salt. Leave them to stand, covered overnight. Strain the Choko and rinse thoroughly the next morning. - Add the1.1 kg Choko peeled, cored and diced to the TM Bowl. process 5 sec/speed 7
- Remove the Choko from the TM bowl. Pour them into the steaming basket and allow them to drain further on the sink.
- ADD 170 gm onion
- 15 gm fresh ginger in the TM Bowl. Chop 3 sec/speed 9
- Return the Choko to the TM bowl and
150 gm green apple peeled, cored and diced,. - Next add all remaining pickle ingredients
370 gm sugar
370 gm vinegar
1TBS Tumeric
1TBS curry powder,
1TBS mustard powder,
1TBS mustard seeds
1 tbs black or brown mustard seeds
1/4 tsp ground cloves - Cook 90 min/100/Speed 1 (MC OUT). Place the internal steam basket over the lid to prevent splatter
- Combine remaining Paste ingredients : 1/3 cup plain flour 1/4 cup vinegar 1/8 cup water in a small jug, stir to make a paste
- Add the paste to the chutney
combine 1 min/100/Speed 3 - "Counter-clockwise operation" REVERSE MC OUT - Place the internal steam basket over the lid to prevent splatter. Cook 12min/100/Speed 1. 12 min/100°C/speed 1
- Whilst the chutney is still hot pour into sterilised jars and seal. Once opened pickles should be stored in the fridge.

You will need about 2kgs of unpeeled choko in order to get the 1.1kgs once they are peeled and the cores removed.
