Ingredients

You will need...

  • 50 g Butter
  • 1 clove garlic
  • 4 onions
  • 100 g raw sugar
  • 2 sprig thyme, fresh
  • 250 g red wine
  • 50 g red wine vinegar
  • 1 pinch salt
  • 1 pinch pepper

Recipe's preparation

  1. Place butter in TMX bowl 1min/100 deg/ Speed 1

     

  2. Peal onions, cut in half and then slice. Add to TMX bowl. Finely slice garlic and add to TMX bowl. Saute onions and garlic 3 min/Varoma/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" .


  3. Sprinkle raw sugar over onions add Thyme and cook 15 mins/Varoma/Counter-clockwise operation"Counter-clockwise operation" /Speed 1.


    Onions are ready when fluid has evaporated and onions are soft and sticky but still moist.


  4. Add all remaining ingredients and cook 15 mins/Varoma/Speed 1.

     

    Jam is ready when fluid has evaporated and mixture has a sticy jam consistency.

     

  5. Serve immediately or place in jars. Will store for up to 3 months.

Tip

Great served as an accompaniment for cheese or on steak

    I added a dried chilli and also cooked an extra 5 minutes. Looks and smells great can’t wait to use it in my sandwiches and add to the cheese platter. Next time I’m trying with the fig balsamic. Thank you a great use of my left over onions from Xmas

    Just making this now. Had defrosted 1 kg of sliced onions for a barbecue that was cancelled so.. Making onion jam! Smells delicious

    Have made a couple of onion jams off the RC, which I was not happy with. Thought would give this one a try before I go back to buying my favourite one. This one is every bit as good as the one I buy. Thanks for a great recipe. I leave the MC off

    Really like this, unfortunately after about 12 mins on varoma setting the stupid bloody machine came up with the dreaded C160 error!!!! Argh!

    Thanks for the recipe, tried a commercially produced (by a winery) version yesterday and was going to buy it but decided to give it a go in the thermomix instead. glad I didn't buy it so easy and yummy.
