Ingredients

Garlic and butternut Hommus

  • 900 g butternut pumpkin, Halved and seeds removed
  • 30 garlic cloves, peel on
  • zest of 1/2 lemon
  • juice of 1/2 lemon
  • 2 tbsp tahini
  • 10 sprigs fresh thyme, leaves only
  • 4 sprigs flat leaf parsley, leaves only
  • 50 g crumbly cheese, Fetta or goats cheese
  • Salt and pepper, to taste

Recipe's preparation

    Hommus
  1. preheat oven to 200 degrees C

    Cut butternut pumpkin in half, and scrape out the seeds

    Rub with olive oil and salt, and place in the oven for 25 min

    Add garlic cloves and roast for an additional 20-25 min

    Remove from oven

    zest the lemon with a veggie peeler, and blitz the zest 10 sec/speed 9. scrape down the side of the bowl

    Scrape out pumpkin flesh and place into TM jug along with the garlic cloves

    Add lemon juice, tahini and salt and pepper, blend 10 sec/speed 6 or until desired consistency is reached.

    Place in a bowl, crumble the cheese over the top and garnish with thyme and parsley. 

Tip

You can use the pan juices from your roasting dish to add extra flavour. Just mix with the lemon juice to release from the pan.
