Sweet Chili Sauce
- 40g fresh red chilli, Stems removed (weighed amount after stems removed)
- 585g sugar
- 620g white vinegar
- 500g sultanas
- 8 cloves
- 18g salt
- 15g fresh ginger

- Place large bowl onto Thermomix and weigh all ingredients into the bowl.
Set aside to soak overnight. - Place soaked ingredients into your Thermomix bowl, and set timer for 15min/100°C/Sp2, replacing your MC with the simmering basket on your lid
- Remove the simmering basket, and place your MC back into the lid.
TM6 users - Activate the "Blend" mode for 1min, Sp8.
TM5/TM31 users - Set timer to 1min, and slowly increase the speed up to Sp8. - Set timer for 8min/100°C/Sp2, replacing your MC with the simmering basket on your lid
- Pour into clean, sterilised jars and seal jars using your preferred method
Tip
The type of chillis you use will determine how hot this sauce is.
You can also add garlic into the ingredients if you wish.
This recipe was one that my Dad would make while I was growing up.
I hope you enjoy it, as much as we do.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
