Ingredients

Cauliflower au Gratin

  • 2 --- cauliflower, 2 small full heads cauliflowers, cut into large florets
  • 90 grams Butter
  • 90 gram plain flour
  • 736 grams Milk
  • 120 grams tasty cheddar cheese, grated
  • .5 teaspoon salt, to taste
  • 2 pinch black pepper, freshly ground, to taste
  • 2-3 pinch ground nutmeg, good pinches
  • 1 portions fresh breadcrumbs, 1 cup
  • 60 gram Cheddar cheese, extra, grated
  • 30 gram Butter

Recipe's preparation

    Method
  1. 1. Place fresh bread in mixing bowl and blend 8-10 sec/speed 8Closed lid"Closed lid" . till all crumbed. Remove from bowl and measure 1 cup of breadcrumbs into seperate bowl, Add 30g melted butter and 60g Grated cheese and mix for topping, Rinse bowl for next step. Note. This can be done in thermomix but just as easy to do in seperate bowl.
  2. 2. Place 2 small head Cauliflowers cut in large florets in Varoma with lid on.
    3. Put 500g water into Thermomix Bowl and place Cauliflower, in Varoma, into position and steam Cook 25-30 Mins/ Varoma/ Speed 1. Set Varoma aside and empty mixing bowl.
    4. Put 90g plain flour, 90g butter and 736g milk into bowl and cook 10 mins/ 90deg/
    Speed 3.Closed lid"Closed lid"
    5. Add Nutmeg, Salt and Pepper and 120g grated cheddar cheese and mix 5 Sec/Speed 5Closed lid"Closed lid" . Adjust seasoning to taste.
  3. 6. Place 1/3 Sauce on bottom of dish, arrange cauliflower on top and then the rest of the Sauce.
    7. Top with Breadcrumb mixture.
    8. Bake in Moderate oven 15 to 20 minutes or until golden brown.

    This recipe is doubled, for smaller quantities halve ingredients.

Tip

You may need to cook cauliflower in 2 batches. I use a Varoma Extender to make varoma deeper.
Sauce will thicken up as it cools. I like to stop half way through cooking sauce and stir with Spatula. Personal preference. Prep time depends on the individual. I have made this recipe.
