Ingredients

Pumpkin, lime & coconut soup

  • 1 Lime, zest only
  • 100 grams raw cashews
  • 1 brown onion, cut in quarters
  • 1 small pieces fresh ginger
  • 20 grams olive oil
  • 1/4 level tsp dried chilli flakes
  • 800 grams pumpkin flesh, chopped into 5cm chunks
  • 1 cans coconut cream
  • 1 level tbsp Vegetable stock paste

Recipe's preparation

    Method
  1. Peel lime zest into bowl and add cashews. Chop speed 8, 15 seconds or until fine. Set aside.
  2. Add onion and ginger and chop speed 5, 5 seconds.
  3. Add oil and chilli flakes and cook on 100 degrees, speed 2 for 3 minutes.
  4. Add pumpkin & stock and add enough water to almost cover vegetables. The less you add the thicker the soup will be.
  5. Cook at 100 degrees, speed 1-2 for 20 minutes, or until pumpkin is soft.
  6. Add coconut cream and lime/cashew mix, cook for further 5 minutes, speed 2, 100 degrees. Season with salt and pepper.
  7. Blend by going slowly from speed 1 to speed 9. Blend for 40 seconds.

Tip

If you don't have enough pumpkin, use a mix of pumpkin, carrot, sweet potato and potato.

    This soup is delicious, full of flavour and healthy! I used 150g extra pumpkin and added more chilli flakes as I love spicy food. Would definitely make this again Big Smile

    I really enjoyed this soup - a bit spicy and very tasty. I used Kaffir lime leaf instead of lime zest otherwise followed the instructions and worked well. Thank you for the recipe.
