Ingredients
- 1 Thick Sliced Bread, Ciabatta or sour dough
- 4 Roma tomatoes, Chopped roughly
- 2 cloves garlic fresh, Roasted and puréed
- 1 small red onion, Chopped
- 2 heaped tablespoons basil leaves, fresh
- salt and freshly ground pepper, To taste
- 1 level tablespoon balsamic vinegar
- 3 level tablespoon extra virgin olive oil

Slice bread thickly and baste both sides with olive oil. In TM bowl combine tomatoes, onion basil vinegar, seasonings and 1 tablespoon of oil with 2-3 quick turbo bursts. Pour into bowl. Grill bread slices on both sides in a grill pan to get nice grill lines or even in an electric panini cooker. Spread a thin layer of the puréed roasted garlic over each slice then top with tomato mix which should be chunky.drizzle a little olive oil on top of the tomatoes and serve.

Serve immediately after assembly.
