Ingredients
Filling
- 2 cloves garlic
- 20 grams olive oil
- 2 medium brown onions
- 150 grams fresh spinach leaves
- 4 eggs
- 60 grams cream
- 1/4 tablespoon Nutmeg
- 150 grams feta cheese
- salt, to taste

1. Preheat oven to 180 degrees
2. Peel garlic gloves and blitz, 3 seconds / speed 7
3. Add quartered onion, 3 seconds / speed 4
4. Scrap down sides of bowl and saute, 3 mins / Varooma / speed 1
*Give it another minute if the onions haven't gone soft & translucent
5. Add spinach leaves, they fill the bowl but you won't have any trouble putting the lid back on. 3 seconds/ speed 4.
*I scrap down the bowl and repeat once or twice until everything looks combined.
6. Put spinach mixture aside and rinse out the bowl
7. Crack eggs into the bowl, add cream, nutmeg, a heavy pinch of salt and ground pepper. 20 seconds / speed 4.
8. Add fetta, I smash it up a bit first so its already in pieces. 20 seconds / speed 4.
9. Add spinach mixture back to the bowl. Reverse speed / 20 seconds / speed 4
10. I use a mini muffin tray so the thermomix measuring cup is perfect for cutting puff pastry into circles to line the cases with.
11. Spoon the filling into each puff pastry lined case at about ¾ full.
12. Bake at 180 degrees for around 35 minutes or untilegg has puffed and browned around the edges, and visible puff pastry has browned.
Tip
If you like salt be liberal with your shaker, it does make the feta stand out more.
Also don't be precious about how the fetta breaks up, its ok for it to be chunky & different sizes.
