Allie's Christmas Spice Cookies

  • 340 g plain flour
  • 2 level tsp bicarbonate of soda
  • 1/2 level tsp salt
  • 1 level tsp ground ginger
  • 1 1/2 level tsp ground cinnamon
  • 1/4 level tsp ground allspice
  • 3/4 level tsp ground cloves
  • 165 g unsalted butter
  • 100 g brown sugar
  • 100 g sugar
  • 1 portions egg
  • 1 level tsp vanilla essence
  • 120 g molasses

Recipe's preparation

  1. Preheat oven to 180 degrees celcius
  2. Add bicarb salt cinnamon ginger cloves allspice Combine 6 sec spd 3
  3. Set aside in separate bowl
  4. Add butter 30 sec spd 3
  5. Add brown sugar and sugar 10 sec spd 6
  6. Scrape sides of bowl. 10 sec spd 6
  7. Add egg vanilla molasses. 5 sec spd 6
  8. Scrape down side of bowl. Add dry ingredients. 12 sec apd 4.
  9. 30 sec dough mode
  10. Roll 1-2 Tablespoon size balls and place on cookie tray 1 1/2 inches apart.
    Bake 11-13 minutes until of the cookies begin to set and centre is soft and puffy. Allow to cool on the tray for 5 minutes before transferring to cooling rack.

Tip

Do not overcook. The centre of the cookies should be somewhat soft and spongy when you take them out of the oven, otherwise they will end up hard and dry.
