Ingredients
Almond Crust
- 190 g blanched almonds
- 70 g Coconut
- 200 g sugar
- 60 g Butter
Filling
- 300 g cream
- 200 g sour cream
- 1 teaspoon orange juice
- 1 teaspoon finely grated orange rind
- 6 peaches, poached, peeled and sliced, or large tin sliced peaches

Place sugar into TM bowl and pulverise for 10 seconds on speed 9 to create icing sugar. Set aside 150g.
Add almonds and coconut to TM bowl and mill for 6 seconds on speed 6.
Add butter and mix for a few seconds on speed 6 until mixture resembles breadcrumbs.
Place crumbs in greased flan tin, press onto base and sides of tin.
Bake in moderately hot oven for 12-15 minutes or until golden brown, cool.
Insert butterfly. Place cream into TM bowl with 30g of the reserved sugar, and beat on speed 4 until it reaches the desired consistency. Set aside.
Without washing bowl, add remaining ingredients and mix for a few seconds on speed 6 until well combined.
Pour into prepared shell.
Arrange well-drained peach slices decoratively over top of filling.
Spoon or pipe cream around edge of flan.

To poach peaches:
Place 500g of water into TM bowl, insert basket and place peaches (peeled if firm) into the basket.
Cook for 10 minutes at Varoma temperature on speed 1 (Cooking time could be less if peaches are ripe).

Excellent
I got to try this flan on tuesay, and may very well have been the one from the picture and it was delicious. Such a tasty crust and great complement with the not too sweet and not too squishy filling. I would definitely eat this again.
