Recipe's preparation

  1. Pre-heat oven to 180C.

  2. Place 100 gms pistachios on oven tray and roast for 5 minutes.

  3. Place the remaining 75 gms of pistachios and all the sugar into TM bowl and pulvarise for 15 seconds on speed 7.

  4. Place 250gms milk into TM bowl and mix for 1 minute at speed 4 to create a green colourd mixture.

  5. Place the rest of the ingredients into TM bowl and mix for 10 seconds on speed 4.

  6. Cook for 9 minutes at 80C at speed 4.

  7. Place the mixture into a stainless steel tray and cool down. Then place in freezer for about 4 hours until it is firm but not frozen.

  8. Spoon frozen mixture back into TM bowl. First mix for 20 seconds at speed 9,  and then 10 seconds at speed 4.

  9. Place the mixture back into the stainless steel tray and fold the 100 gms roasted pistachio kernals into this mixuture.

  10. Return to the freeze runtil firm, approximately for 3 to 4 hours.

  11. Serve.

    Dear Rhondam,

    I have been away for a couple of years, so could not respond to questions. The recipe is correct and tested at my kitchen for at least 100 times in years. You need to place the ice cream into a container and place it to your freezer. You should take the ice cream out in two hours and fold it with a spoon, then keep in the freezer another two hours. Make sure that your frezer is not stacked.

    Rhondam: Not sure if my reply first worked so if I am repeating myself, apologies in advance.

    In a more Take 2 brief reply to my fist ... I suspect it may be your freezer. It is a softer icecream but not by much. Also, make sure you use full cream milk - not light/lite and it is best left overnight (if you can wait) ... it’s worth the wait.

    I’m so confused. Just tried making this but it’s still not firm after 6 hours!
    I think my freezer is ok. It’s very liquid so I need to ask a dumb question, it’s definitely 500gm Milk?, it’s says add 250g to mix then you add another 250g right ?

    Absolutely the very best Pistachio Icecream I’ve ever tasted. And way tooooo easy to make. Took the icecream into work to share with my ‘Crash Test Dummies’ tasters and it was a huge hit. Definately going into my ‘Favourites File’.

    Wow this is the best recipe for icecream ..even though Pistachios are very expensive it is worth it...
