Ingredients

For Biscuits

  • 130 g Butter
  • 25 g golden syrup
  • 200 g brown sugar, Adjust to taste
  • 100 g rolled oats
  • 90 g Shredded coconut
  • 150 g plain flour
  • 1 tsp Bi-carb soda
  • 2 tablespoon Boiling water
  • 1/2 tsp salt

Recipe's preparation

  1. Pre Heat Oven to 160 degrees celsius - fan forced or 180 if not fan forced.  Line baking trays with Baking Paper.

    Add Butter and Golden Syrup to TM Bowl and melt for 2:30 mins / 80 degrees / speed 2

    Add Sugar and melt 1 min / 80 degrees / speed 2

    Add to the TM Bowl the Oats, coconut, flour and salt.  Using the spatula, make a well in the oats/flour mixture.

    In a seperate bowl, mix together the bi-carb and boiling water.  Mix until bi-carb is disolved then pour the mixture into the well made in the flour mixture.

    Put Lid and MC on and mix on Reverse Counter-clockwise operation"Counter-clockwise operation" , speed 4 for 10 seconds.

    Place spoonfuls of the mixture onto the baking trays - leaving enough room for the biscuits to spread.  I used about 3/4 of a soup spoon full of the mix for each biscuit.

    Depending on your oven and the size of your "biscuit blobs" you will need to bake for around 8 - 10 minutes.  Until they are just a dark golden at the bottom and until they have flattened out nicely.

    Remove from oven and cool for 1-2 mins on the tray, then transfer to a wire rack to cool completely.

    These biscuits are a great blend of crunchy on the bottom but still a little chewy.

Tip

These biscuits are a bit on the sweet side.  You may want to adjust the sugar to your liking.

    My first ever Anzac bickies! Super easy and yummy! I did increase oats too 100g and when mixing all I did reverse one way then normal the other.. They turned out lovely and soft and delicious!

    Oh my gosh these are the best Anzac biscuits I've ever eaten! I substituted 160g of coconut sugar for the brown sugar. Delicious 😋

    Delicious!! Crunchy and chewy!! I used 160g brown sugar, 25g of rice malt syrup & 1 tbsp maple syrup as a substitute for golden syrup and they were perfect.
