Ingredients

Apple Slice

  • 125 grams Butter, room Temperature
  • 125 grams raw sugar
  • 5 grams vanilla essence
  • 2 eggs
  • 125 grams plain flour
  • 125 grams self-raising flour
  • 5 grams cinnamon
  • 125 grams ground hazelnuts
  • 3 apples, Pink Lady
  • 60 grams apricot jam

Recipe's preparation

    Apple Slice
  1. Preheat the oven to moderate 180 degrees. Grease a 26cm x 16cm slice tin and line with baking paper, ensuring that it is hanging over two sides.

     

    Place butter and sugar into bowl and mix 30 sec onds  / speed 5 - 6 or until light and fluffy.

    With blades rotating on speed 3, add eggs one at a time through hole in mixing bowl lid until combined into mixture, add vanilla.

    Add flours, Cinnamon and hazelnut and mix 10 - 20 seconds / speed 3 or until combined.

    Spread mixture into tin and smooth surface with spatula. Quarter apples then cut into thin slices. Press into batter skinside up.

     

    Bake for 25 minutes, or until springy to touch. Cool in tin for about 5 minutes, then lift onto rack to cool.

     

    Place apricot jam into bowl 1 min / 37degrees / speed 1 until all melted and warm.

     

    With a pastry brush glaze the Apple Slice, serve warm at room temperature . Cut into squares to serve.

     

Tip

Hazelnuts can be substituted with almonds
