- 100 grams cashew nuts, Unsalted
- 100 grams raw sugar
- 150 grams plain flour
- 130 grams Butter, Unsalted & Softened
- 2 tsp Vaniila Extract
- 50 grams Coconut

Preheat oven to 180 degrees, line a tray with baking paper or spray.
Place cashews and sugar in bowl and mill 10 sec/ / speed 9
Add coconut, plain flour, butter and vanilla into bowl with milled cashews and sugar and combine all ingredients on 1 minute / locked lid / knead
Remove mixture from bowl, roll into balls and place on baking tray, press down gently with a fork.
Bake 20 minutes, until golden brown, remove from oven and wait 5 / 10 minutes to cool slightly, transfer onto a rack to finishing cooling.

These are yum and smell divine when cooking! Only used 90g of sugar. Will decrease this to 80g next time
we LOVE these!
I added a pinch of bi-carb soda and a pinch of baking powder which made them super crunchy!
Delicious! I used gf flour, 80g honey and 90g coconut oil and added an egg to suit my families dietry requirements. They turned out very nice.
I have now baked these twice - to much satisfaction of my crowd! So, so simple and super tasty! A new go-to in our household.
These are yum, I used coconut sugar instead of raw, only cos I had some,
Yum. Took some to work and they loved them. Nice with some cranberries or sultanas added at the end on reverse. I used a half/half mix of buckwheat and spelt flour milled at the beginning.
My favourite cookie recipe so far! Delicious!
