Ingredients

Apple and carrot pikelets

  • 1 Large carrot, Cut into 3
  • 2 apples, Cut in quarters and cored
  • 250 g Self Raising Flour
  • 220 g Milk
  • 1 egg
  • 2 heaped tablespoon brown sugar
  • 1/2 teaspoon cinnamon

Recipe's preparation

  1. Grate apple and carrot 5 seconds, speed 6

  2. Add all other ingredients and mix 20 seconds, speed 4

  3. Drop tablespoons into a frypan on medium heat, turning when bubbles appear on surface. Cook until golden on both sides.

  4. Serve with butter or syrup.

Tip

You can subsitute other fruits in place of carrot and apple- eg

2-3 bananas

200g berries (add at the last 3 seconds of mixing time)

2 ripe pears

    Made little finger shapes for lunch boxes, and omitted the sugar. They don't need it. I used a banana instead of one of the apples and I think it made them quite thick and heavy. Super easy to make , yum

    Lovely recipe. Kids gobbled these up in an instant.  Just made a second batch and I used a purple carrot. Has made them a cute purple colour which I'm sure the kids will love! Thank you for sharing x

    Great recipe thank you. I used 2 Granny Smiths and a carrot, turned out great. The cinnamon adds a great twist to the classic pikelet recipe and not too much sugar keeps them healthy, next time I'll try using wholemeal flour.

    Yum! I used two apples and a ripe banana and these turned out beautifully tmrc_emoticons.) will try the carrot as well next time. Great morning tea snack!
