Crumble
- 300 g raw sugar
- 300 g flour
- 1 stick cinnamon
- 230 g Butter

- 180 g Butter
- 200 g raw sugar
- 250 g sour cream
- 2 eggs
- 1 tbsp vanilla extract
- 240 g plain flour
- 1.25 tsp baking powder
- 1 tsp bicarb soda
- 1/2 tsp Nutmeg
- 400 g green apples, quartered, stalk removed

Add apple to TM bowl. Chop Speed 5/ 2 seconds.
Set aside
Add sugar (300g), flour (300g) and stick of cinnamon to TM bowl. Mix Speed8/10 seconds.
Add butter (230g). Mix Speed6/10 seconds.
Set aside.
Add butter and sugar to TM. Mix Speed5/10 seconds. Add butterfly. Mix Speed4 / 2minutes.
Turn TM onto speed 4. Add eggs one at a time through opening whilst still mixing Speed4.
Add vanilla extract and sour cream though opening whilst still mixing Speed 4.
Add remianing ingredients (except apple). Mix Speed 5/10 seconds or until combined. Don't overmix.
Preheat oven to 175 degrees celsius.
Line springform pan with baking paper
Add 1/2 cake batter to spring form pan. Spread with chopped apple and 1/2 crumble. Top with remaining batter and crumble.
Bake for 50-60min.

This is such a winner! I halved the sugar on the cake, instead of apples I used pear and frozen finger plums (from a friend's farm), and instead of sour cream I used yoghurt. Moist, delicious and perfect with a cuppa!
