Ingredients

Lemon tray bake

  • 175 g Butter
  • 175 g sugar
  • 1 lemon, rind
  • 250g Self Raising Flour, or plain flour and extra 4tsp baking powder
  • 3 eggs
  • 1.5 tsp baking powder
  • 1/2 lemon, juiced
  • 250g g sugar

Recipe's preparation

    Traybake
  1. Add sugar (175g) and lemon rind to Closed lid"Closed lid" . Mix 10sec Sp4.
  2. Add flour (250g), eggs (3), butter (175g) and baking powder (1.5tsp). Mix 2min Sp5 until batter is smooth.
  3. Pour into lined baking tray and bake 180deg in a preheated oven for 35-40min.
  4. Allow to cool 10 min in tray. Turn onto a plate or platter.
  5. Icing
  6. Blitz sugar (250g) 15sec sp10. Scrape sides. Repeat twice until a powdery consistency.
  7. Add lemon juice (1/2 lemon). Mix Sp4 until smooth (approx 30sec).

    This cake has a delicious flavour, however my first attempt resulted in quite a dry cake.

    For my second attempt, I added a splash of milk to the batter as it seemed "dry" and I lowered the oven temp to 160 in a fan-forced oven and baked the cake for 35 minutes - perfecto!

    i iced the cake, in the baking tin, while it was still warm - two thumbs up from hubby this time.

    I also halved the sure in the batter.
