  • 3 overripe bananas
  • 4 tablespoons rice malt syup
  • 2 teaspoon Vanilla Essence/Extract
  • 1 tablespoon cinnamon
  • 3 teaspoons chia seeds
  • 260 grams Gluten free self raising flour
  • 2 tablespoons Soy flour
  • 4 eggs

Recipe's preparation

  1. Preheat oven to 180 degrees. Line bottom of baking tin with baking paper and lightly grease tin. 

  2. Mix banana and rice malt syrup in TM bowl for 20 seconds speed 2.

  3. Add all other ingredients to TM bowl and mix for 20 seconds on speed 4.

  4. Pour mixture into prepared baking tin and bake in the oven for approx  20 - 25 mins or until cooked through.

    Turned out OK, had to leave out chia seeds and soy flour as I am intolerant to these. Had to cook a lot longer than the 20-25 minutes.  And it would be easier if weights were listed for banana and rice syrup.  You would get a more consistent result.

    Didn't really like the texture (quite heavy and doughy)
