Ingredients
Banana Cake
- 3 Bananas, ripe
- 10 grams lemon juice
- 460 grams plain flour
- .005 grams Bi Carb Soda, (approx)
- 1 pinch salt, (approx)
- 180 grams butter, soft
- 450 grams sugar
- 3 eggs
- 10 grams vanilla
- 370 grams buttermilk
Cream Cheese Frosting
- 125 grams Butter, softened
- 250 grams cream cheese, room temp
- 5 grams vanilla
- 530 grams icing sugar

1. Preheat oven to 135 degrees celsius and grease/flour a 22 x 33cm cake pan.
2. Add Banana and lemon juice to "Closed lid" and mix on 5sp for 20sec or until mixed together. Set aside.
3. Add flour, baking soda and salt to "Closed lid" and mix 5sp for 10sec or until mixed through. Set aside.
4. Add butter and sugar to "Closed lid" and cream together 6sp for 1min 30sec.
5. While mixing on 2sp, beat in eggs, one at a time through the lid. Add vanilla and mix through.
6. Mix in flour alternatively with the buttermilk on 3sp.
7. Add bananas and mix 4sp for 30sec.
8. Pour mix into prepared pan and bake for 1 hour and 10 mins, check cake is cooked before removing. It may require additional cooking time. Make sure you check every 10mins until cooking is complete.
9. Once cake is cooked, remove from the oven, place on a towel and pop in the freezer for 45mins (or until cooled).
10. Ice your cake and enjoy!
1. Add butter and cream cheese to "Closed lid" and cream together.
2. Add vanilla and icing sugar and "Gentle stir setting" until combined. Increase to 5sp until smooth.
