Ingredients
- 180 g raw sugar
- 110 g Butter or Margarine
- 2 eggs
- 3 ripe bananas, quartered
- 240 g Self Raising Flour
- pinch salt
- 2 tbsp Milk
- 1/2 tsp Bi Carb Soda

Grease and line ring cake pan or use silicone bundt pan. Pre-heat oven to moderate. (190-200 C electric)
Mill sugar for 10 secs, sp 9.
Add butter, eggs, and bananas, mix for 15 secs, sp 5.
Add flour, salt, milk and bi-carb soda, mix for 15 secs, sp 5. (Scrape down sides after 10 secs if needed.)
Pour into cake pan. Bake for 25-30 mins. (Longer if bananas are large.) Test cake with scewer to see if it is done.)
Tip
I find that cakes with fruit in them are extremely moist so I always use a ring cake pan to ensure even baking all through. You could also use loaf tins.
The amount of batter varies considerably depending on the size of the bananas. If too much for my cake pan, I make a few muffins with the excess.

Easy to make and tastes great 😋
I've baked this recipe in both a loaf tin and a ring cake pan. Best results are with using the ring cake pan.
Best ever banana cake recipe! Will definitely make this again.
I should also note that i increased the flour to 300 gm added another egg reduced the sugar to 100gm and 1 tsp each of nutmeg and cinnomin
I have added figs to this recipe as well as nutmeg and cinnomin turned out amazing very moist and with the cream cheese icing sugar and lemon juice icing on top it did not last long after sharing with friends
Worked out great, I reduced the sugar to 120g and made 12 muffins instead.
Delicious. A firm favourite in my house.
Quick & easy. Great way to use old bananas. I too reduced the sugar to 140g & reckon you could easily go less again.
suggestion: maybe add a little cinnamon or nutmeg to mixture.

So, soooo good that I've moved the recipe to Cookidoo 👏🏻. Moist enough that it doesnt need any icing (imo). Had to cook longer, then almost forgot it but everyone raved how good it was.
