Wow amazing I used all buckwheat as low on quinoa and replaced the vege oil with leftover whey from ricotta making. This so outstanding made 2 3/4 loaves. Did not add honey as added 50g more banana. Kids loved it you would not even think it's not got flour in it. Better than I ever thought it could be light fluffy tasty! Thank you I will make this again and again
Yum! I used half buckwheat/half quinoa, and it came out great. A little too sweet for me so I'd probably cut back on the sugar next time.
I baked it in a square cake pan and put slivered almonds on top (because I needed to use them up).
Thanks for the recipe.
I didn't have any vegetable oil so I used coconut oil. I also reduced cooking time to 30mins. Delicious!! 😋
Great recipe, really easy and tasty. I did replace the quinoa with Besan flour and cut back a little on the sugar, but it was still delicious and the texture was great also. Thank you, this is the best banana bread I've made in a long time.
Tastes awesome and easy to make thanks for the recipe
Left out the sugar added an extra banana and used melted coconut oil, turned out great and my 2 year old loves it!!
I'm new quinoa - this recipe to me is like regular banana bread, we really enjoyed it
Thanks for the recipe! I couldn't get passed the quinoa smell when going to eat it, so i substituted with besan flour. Works just as well & still tastes great!
Lovely recipe - Mine was a little dry, but I very possibly over cooked it. Some butter/marg/jam solved the problem anyway! Also great toasted for the next days breakie
I think I do, but it takes a bit longer.
I washed the quinoa by putting it in a strainer (or colander with small holes) and washing in a bowl of water, so I could remove the quinoa quickly so it doesn't get too wet. I gave it about three quick rinses (fresh water each time) before spreading on a baking tray and leaving it to dry. You could pop it in the oven on low with the door open. In my case, I put the tray in the lounge room with the gas fire on! After a few hours, I put it in a bowl and left it out overnight. Next morning, the quinoa now weighed 290g, So with some trepidation, I milled. Success, I did get flour but not as dry as without the washing of course. Continued with the recipe and it worked out nicely. There is still a little bitterness (I realised I'd left out the brown sugar), but I hope the kids find it improved. You could always add a few more dates too!
If you don't have the time (drying does take a while) I'm sure you could try quinoa flour if you didn't want to mill. You could also try buckwheat as Wilcom suggested. Thank you both for your comments.
