Ingredients

Banana, Maple and Date Muffins

  • 100 grams pitted dates
  • 2 --- bananas
  • 60 grams Maple syrup
  • 2 --- egg
  • 250 grams Milk
  • 80 grams olive oil
  • 350 grams plain flour
  • 20 grams baking powder
  • 1/2 tsp bicarbonate of soda
  • 110 grams brown sugar
  • 1/2 tsp mixed spice

Recipe's preparation

  1. Pre-Heat Oven to 200 Degrees (180 Degrees Fanforced)
    Grease Muffin Tin (18 Holes) and set aside.

    Place 100g Dates, Plce lid and Measuring cup on and Chop 5 Seconds/ Speed 8.
    Transfer into a bowl and set aside.

    Place 2 Banana's into bowl, Place Lid and Measuring Cup on and Mash 6 Seconds / Speed 4.
    Place 60g Maple Syrup and 2 Eggs Into Bowl, Place Lid and Measuring Cup on and mix 5 Seconds / Speed 5.
    Scrape down sides of bowl.
    Place 250g Milk and 80g Olive oil in Bowl, Place Lid and Measuring Cup on and Mix 5 Seconds / Speed 5.
    Place 350g Plain Flour, 20g Baking Powder, 1/2 tsp Bicarbonate of Soda, 110g Brown Suagr and 1/2 tsp Mixed Spice into the bowl, Place Lid and Measuring Cup on and Mix 20 Seconds / Speed 4.
    Scrape sides down and once around the Bottom of the bowl.
    Place Lid and Measuring Cup on and Mix 15 Seconds / Speed 4.
    Place Chopped Dates into Bowl and Place Lid and Measuring Cup on and Mix 5 Seconds / Speed 5.

    Divide batter into 18 Muffin hole tin.
    Place into the Oven and Bake for 20-25 minutes.
    Leave to cool for 5 Minutes in Muffin tin before place onto a cooling rack.

Tip

You will also need;
- 18 Hole Muffin Tin.
- Cooling Rack.

Serve Warm or cold.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     These muffins taste delicious and make a huge batch which is great for freezing - school lunch boxes! I reduced my oven to 160 fan as I always cook muffins at this temp. My muffin mix, while cooking, spread to the side, so unfortunately they didn’t look that appealing with a sideways dome. Any suggestions why this happened?
