Ingredients
Banana Cake
- 2-3 bananas, (Ripe)
- 65 g Butter, Cold
- 205 g sugar
- 2 eggs
- 1 level tsp vanilla extract
- 230 g self-raising flour, (Extra Tablespoon if mixture is too loose)
- 3 tablespoons Milk, Warm
- 1/2 level tsp bicarbonate of soda
Frosting
- 220 g icing sugar, (Add more if too runny)
- 30 g Butter
- 25 g Milk
- 1 level teaspoon Coffee Essence, Or 1/4 tsp coffee powder

- Line a 21 x 25cm cake pan with baking paper.
- Preheat oven to 180 degrees Celsius.
- Mash 2 or 3 bananas 4 seconds/speed 6.
- Scrape down sides and repeat for 2 seconds/speed 6 if necessary. Set aside in a bowl.
- Cream butter and sugar 40 seconds/speed 4.
- Place whisk in "Closed lid" , scrape down sides and add eggs. Whisk 40 seconds/speed 4.
- Add mashed bananas to "Closed lid" and whisk 40 seconds/speed 4.
- Remove whisk from bowl.
- Add carb soda mixed into the milk, vanilla and flour. Mix 6 seconds/speed4. Scrape down sides and repeat if necessary to make a smooth batter.
- Pour cake mixture into prepared pan, smoothing into corners, bake in moderate oven 40-45 minutes or until skewer comes out clean. Cool before icing.
- Add all frosting ingredients to "Closed lid" with butterfly whisk and whisk 20 seconds/speed 4

Tip
If the bananas are small to medium, use 3 but if they are large bananas, use 2 as they will make the batter too loose and create a boggy cake.
This cake should be very light and soft.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
