Ingredients
- 2 tsp lemon rind
- 2 heaped tablespoon coconut oil
- 2 tbsp Natvia or sweetener of choice
- A squeeze of lemon juice
- 2 large eggs
- 1 cup almond meal, or oat flour
- 1/2 cup Shredded Coconut
- 2 heaped tablespoon Greek yoghurt
- 1 cup frozen blueberries
- 1 tsp baking powder

Preheat oven to 180C. Grease or line (using patty pans) muffin tray (enough for 8 muffins). Set aside.
Place lemon zest into mixing bowl and chop 10 sec/speed 7, or until quite fine. Set aside.
Add Coconut oil and natvia and mix 15secs/speed 4 until combined.
Add lemon juice and eggs and mix 10secs/speed 4.
Add dry ingredients and mix 20seconds/ "Closed lid" /"Dough mode" .
Add yoghurt and mix 10secs/speed 4.
Spoon mixture into muffin trays. Press blueberries on top. Bake 20mins or until golden & cooked through. Note: they don't rise much.
