Ingredients

  • 2 tsp lemon rind
  • 2 heaped tablespoon coconut oil
  • 2 tbsp Natvia or sweetener of choice
  • A squeeze of lemon juice
  • 2 large eggs
  • 1 cup almond meal, or oat flour
  • 1/2 cup Shredded Coconut
  • 2 heaped tablespoon Greek yoghurt
  • 1 cup frozen blueberries
  • 1 tsp baking powder

Recipe's preparation

  1. Preheat oven to 180C. Grease or line (using patty pans) muffin tray (enough for 8 muffins). Set aside.

  2. Place lemon zest into mixing bowl and chop 10 sec/speed 7, or until quite fine. Set aside.

  3. Add Coconut oil and natvia and mix 15secs/speed 4 until combined.

  4. Add lemon juice and eggs and mix 10secs/speed 4.

  5. Add dry ingredients and mix 20seconds/ Closed lid"Closed lid" /Dough mode"Dough mode" .

  6. Add yoghurt and mix 10secs/speed 4.

  7. Spoon mixture into muffin trays. Press blueberries on top. Bake 20mins or until golden & cooked through. Note: they don't rise much.
