Ingredients

  • 2-3 chicken breasts, cubed
  • 1 small head of brocolli, cut into small florets
  • 1 zucchini sliced
  • 1 large carrot, sliced
  • 1000 g water

Satay Sauce

  • 1/2 red onion (Spanish)
  • 1 tbsp coriander, fresh
  • 1.5 tbsp coconut oil
  • 1 tsp ground cumin
  • 2 cloves garlic, peeled
  • 3 tbsp Natural crunchy peanut butter
  • 1 small red chillies, unseeded
  • juice of half lime
  • 2 tbsp Natvia or coconut sugar
  • 3 tbsp Shredded coconut
  • 1 tsp soy sauce or tamari, (optional)
  • 1-2 cups water

Recipe's preparation

    Steaming chicken and vegetables
  1. Place water in TM bowl. Put Varoma into position and spread chicken out evenly within the tray to enable holes for the steam to come through. Place chopped vegetables in top tray. Steam 20 min/Varoma temp/speed 2.

  2. Once cooking time has finished stir the chicken and veges, breaking the chicken apart and again, making sure there are still holes unblocked for the steam to get through. Cook for further 5 - 10min/Varoma temp/speed 2 checking the chicken is cooked through. Once cooked, remove chicken and vegetables from Varoma tray and place in thermoserver while you make the sauce.

  3. Satay sauce
  4. Place garlic, onion, chilli, and coriander into mixing bowl and chop 5 sec/speed 7.

  5. Add cumin and coconut oil, saute 3mins/Varoma temp/Speed 2.

  6. Add peanut butter, lime juice, Natvia (or coconut sugar), coconut and soy sauce and mix 10sec/speed 4 (this will form a paste). Gradually add the water, about 1/2 cup at a time until you get the sauce to a consistency that you like (more water = runnier sauce). Cook 5mins/Varoma temp/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" .

  7. Pour sauce over chicken and vegetables and gently stir to combine. Serve with "Slim pasta".

    Dish was nice. Sorry wasn’t fantastic 🙁 on reading all the other comments I decided to double the sauce ingredients and I put in 3 Birdseye chillies 🌶 with seeds left in as I do like dishes hot. I also added fresh green beans to vegetables as I bought quite a few today. Was good but I’ve tried nicer satay recipes

    Great recipe. I only used 3/4 cup of water in the satay sauce which made it a nice consistency. Nice & healthy. Thanks for posting.

    Excellent, I read the comments and I too added just a teaspoon of red curry and also kept to only 1 cup of water. Creamy and tasty. Thanks for sharing

    Unfortunately I wasn't too impressed with the satay sauce tmrc_emoticons.-(

    I like a lot of sauce so I added 1 cup of water however this made it too runny so I had to compensate with 1/2 tbsp cornflour to thicken. The taste was still a bit bland so I added 1/2 tsp keens curry powder, the juice from the other half of the lime, and 2 more splashes of soy sauce. This added a bit more flavour for my personal tastes. I've never made satay before so I have nothing else to compare this to other than what I've eaten in restaurants and I have no idea what ingredients they would use.

    Next time i'll have to get thighs as the breast was a tad too dry. I only cooked my veg for half the time because i like a slight crunch to it.

    WOW!!!!! Just made this for me and the hubby and it was so tasty. I used tahini instead of peanut butter and added a little extra tamari, I also put the vegetables on after 10 minutes. So good, will defiantly be making this again. Thank you!!!!

    This was really enjoyed by myself and my four boys. I thought I might have stuffed it up when I only had 1 tbsp of peanut butter left when I thought I had a whole jar but it was still delicious!!! It's a keeper when the 3 year old has a go at it. Thanks for a great recipe. Served with cauliflower rice  tmrc_emoticons.)
